What is dextrose?

Dextrose is glucose, the same simple sugar your blood carries, made commercially from corn or wheat starch. It’s a sugar in every sense: it counts as added sugar on labels, and it sits at the top of the glycaemic index scale. You’ll find it in cured meats, crisps, sauces, bread and sports products.

Is dextrose sugar?

Yes. US regulations define corn sugar as the ingredient “commonly called D-glucose or dextrose”, made by fully breaking down corn starch and crystallising the result. Chemically it’s identical to the glucose in your blood.

Because it’s already glucose, it needs no digesting before it’s absorbed. That’s why it raises blood sugar faster than table sugar, and why glucose or dextrose tablets are a standard treatment for low blood sugar.

Why is dextrose added to food?

It’s cheap and versatile. Dextrose balances saltiness in cured meats and seasonings, helps baked goods and crisps brown, feeds the yeast in bread, and bulks out powders and sweetener packets. It’s less sweet than table sugar, so it can be used in larger amounts without making food taste sugary.
